It is a highly prized bean and appreciated for its organoleptic characteristics which are influenced by the climate and the particular nature of the soil. It needs well-drained, soft and fertile soils. Del Colle selects this variety from Piedmontese cultivations more suited to this type of legume.

Borlotto is the traditional ingredient for soups, minestrone with vegetables and cereals. Excellent with spelled and pasta and for purées and creams. Also suitable for salads, as a side dish to game dishes or for the typical Tuscan dish "beans alla cacciatora".

Soak for 8/10 hours. Cook for 1 to 1 hour and a half. Add salt towards the end of cooking.
