Del Colle was the direct promoter of the constitution of the Cooperative of the Hills for the cultivation of this spelled which in 1996 obtained the IGP award from the European Community. It is grown in an area of Tuscany (Garfagnana, Lucca) particularly suited to the cultivation of this cereal. Grown at a height of 800 m, this spelled belongs to the "Triticum Dicoccum" variety which differs from the other varieties for a larger grain and excellent cooking resistance with grains that remain well separated and dry.

It can be used for any dish instead of rice and pasta. Sates, gives energy, without weighing you down. Suitable for soups with legumes, minestrone with legumes, cold salads, farrotti (risotto).
