an ancient variety grown in the Piana di Lucca in medium-textured soils, tending to sandy. Smaller than the classic cannellino, it has an almost non-existent peel, a delicate flavor and a soft texture. It is sown from May to July and harvested from August to September.

It is suitable for all uses: for soups, as a condiment for pasta, to prepare soups or simply boiled and seasoned with extra virgin olive oil. It goes very well with white meats and fish.

Leave to soak for 8/12 hours. Cook over medium heat for 60/90 minutes. Add salt towards the end of cooking.
