Cultivated in central Italy, it is harvested in the summer between June and July. It is a very ancient cereal. The most used is the 'pearl' one, i.e. deprived of the external coating. Hence its pearly white color. Pearling is a manufacturing process that deprives the grain of its external coating, making it easier to cook and digest.
